Blackberry Oatcake

Not every oatcake needs to hit the grill. This blackberry oatcake is a chilled-out, straight-from-the-packet kind of treat, perfect for breakfast on the go or a light pud after tea. Sweet, creamy and packed with blueberries, it’s simple, refreshing, and just a little bit fancy (but still proper tasty).

Ingredients:

  • A handful of fresh blackberries

  • 2 heaped tablespoons of Greek yoghurt

  • A drizzle of runny honey

  • A cold Povey’s oatcake

Method:

  1. Lay the oatcake flat and spread a generous layer of Greek yoghurt across the middle.

  2. Sprinkle over the fresh blackberries.

  3. Drizzle with honey to taste.

  4. Fold or roll it up and it’s good to go — no heating, no fuss.

The tang of Greek yoghurt, the pop of blackberries, and the sweetness of honey all wrapped up in a soft oatcake? It’s a little taste of summer, whatever the weather. Best enjoyed chilled with a cuppa or packed up for a snack on the move.
