Not every oatcake needs to hit the grill. This blackberry oatcake is a chilled-out, straight-from-the-packet kind of treat, perfect for breakfast on the go or a light pud after tea. Sweet, creamy and packed with blueberries, it’s simple, refreshing, and just a little bit fancy (but still proper tasty).
Ingredients:
A handful of fresh blackberries
2 heaped tablespoons of Greek yoghurt
A drizzle of runny honey
A cold Povey’s oatcake
Method:
Lay the oatcake flat and spread a generous layer of Greek yoghurt across the middle.
Sprinkle over the fresh blackberries.
Drizzle with honey to taste.
Fold or roll it up and it’s good to go — no heating, no fuss.
The tang of Greek yoghurt, the pop of blackberries, and the sweetness of honey all wrapped up in a soft oatcake? It’s a little taste of summer, whatever the weather. Best enjoyed chilled with a cuppa or packed up for a snack on the move.
